High quality knife in Japanese steel (420 J2). Santoku is a Japanese knife with high versatility and therefore resembles a traditional chef’s knife. The difference is that the santoku knife has a shorter blade which makes it faster to cut with and more comfortable for the knuckles to rest on. The knife is used by many as an all-round knife because it is smaller and more handy.
